Weekly Meal Plan 2025-08-23

It’s the last week of school’s summer vacation, and there’s a good chance of rain for three days. I hope everyone has a backup plan for indoor activities, if needed!

For this week’s menu, I chose old favourites from our meal plan, and included two new recipes – Rotisserie Chicken Noodle Soup, and Creamy Salmon Penne.

We’ll have Keith’s meat loaf Monday and Tuesday. Or, we could switch another meal into the Tuesday slot, and have the meatloaf leftovers on Wednesday.

Weekly Meal Plan 2025-08-16

It’ll be hot this weekend, and then cooler for the upcoming week. And Monday looks like perfect weather – sunny, and 23°C.

If you’re in the Toronto area, the CNE opened on Friday, and runs until labour Day (Sept 1st). This is the annual sign, for parents and kids, that there are only 2 weeks of school’s summer vacation left! That’s good news for some people, and sad news for others.

Weekly Meal Plan 2025-08-09

We’re in another heat wave, with temperatures in the low 30s, until Tuesday. And if you like hot and rainy day, you’re in luck! That’s the forecast for Monday to Wednesday.

Weekly Meal Plan 2025-08-02

It’s a long weekend, here in Mississauga, and the weather forecast looks great! Temperatures will be in the high 20s, with sunshine every day!

For this week’s menu, I chose old favourites from our meal plan, and included two new recipes. We’ll try Chinese-Inspired Corn Soup on Tuesday, after the long weekend.

The other new recipe is Country Seasoned Chicken Breast with Butter Sauce, and we can try that on Friday.

Avgolemono Greek Lemon Soup

Whether it’s hot outside, or freezing cold, we always enjoy this simple lemon and egg soup. It only takes a few minutes to prepare, and it has a bold lemony flavour, that I love!

The egg makes the soup a bit creamy, but not too thick, and it’s added slowly to the soup, to prevent it from turning into “scrambled eggs”!

Chocolate Dump Cake

This cake is soft, gooey and absolutely delicious, which is surprising, considering its list of basic ingredients.

This recipe was used often during wartime when supplies were limited, which is why it doesn’t include milk or eggs. Despite that, it’s easy to make and always turns out great.

Sour Milk Pancakes

This pancake recipe has been passed down through my family for 4 generations, going all the way back to my great grandmother. This simple recipe can make some of the best pancakes you have ever had.

Sour Milk Pancakes

Ingredients

  • 2 ½ cups flour
  • 1 tsp salt
  • 1 tsp baking soda
  • 2 tsp baking powder
  • 2 tsp sugar
  • 2 eggs
  • 2 cups sour milk or buttermilk
  • 2 tbsp oil or melted butter

To make sour milk (buttermilk substitute):

  • 2 tbsp white vinegar
  • Enough milk to measure 2 cups total
  • Let sit for 5 minutes before using.

Instructions

  1. Preheat a griddle or pan to 350°F.
  2. In a medium bowl, whisk together flour, salt, baking soda, baking powder, and sugar.
  3. In a large bowl, whisk the eggs. Add sour milk and beat together.
  4. Add the dry ingredients to the wet ingredients and mix until combined.
  5. Stir in oil or melted butter. Don’t over mix!
  6. Use a ¼ cup measuring cup to pour batter onto the griddle.
  7. Cook until bubbles form on the surface, then flip. Cook another 3–4 minutes, until golden brown

This recipe is special in my family as it’s easy to make during certain occasions like Christmas morning, camping trips, or when we’re up at our cottage.

Here in Mississauga, there’s a week of mixed weather in the forecast. Every day has clouds, and the sun peeks out occasionally. I like the mid-20 temperatures though!

Stovetop Carrot Apple Ginger Soup

When we first tried this soup, it was in the slow cooker all day, and we enjoyed it at supper time.

Later, I adapted the recipe, so I could make it on the stovetop, in a much quicker time! The flavours are just as good, and now it’s a 45 minute project, instead of taking all day.
