One Pot Chinese Longevity Soup
Serves 3-4 Prep time: 10 min Cook time: 15 min
Ingredients
- 4 oz pork tenderloin
- 2 Tbsp cooking oil, divided
- 1 tsp finely grated ginger
- 1 tsp minced garlic
- 4 cups low sodium chicken broth
- 2 cups coleslaw mix
- 1/2 cup canned mushroom pieces
- 1 tbsp rice vinegar
- 1 tsp soy sauce or tamari
- 3 oz uncooked rice noodles
Optional toppings
- bean sprouts, cilantro leaves, sliced scallions, sesame seeds, roasted sesame oil, hot sauce
Prep Steps
- Cut the pork into thin strips, then lightly season with salt and pepper
- Check the coleslaw mix, and cut any large pieces
Cooking Steps
- Heat 1 tbsp oil in 6-qt pot over high heat
- Cook the pork, in batches if necessary, stirring occasionally, until almost done, about 3 minutes
- Remove the pork, and set aside.
- Reduce the heat to medium low
- In the same pot, heat the remaining 1 tbsp oil
- Cook the ginger and garlic, stirring, until fragrant, about 30 seconds.
- Add the chicken broth and bring to a boil over medium-high heat.
- Add the coleslaw mix, mushrooms, rice vinegar and soy sauce, and bring to a boil.
- Reduce the heat and cook uncovered 4 minutes.
- Add the noodles, being careful not to break them.
- Cook until the noodles and vegetables are tender, about 4 minutes.
- Stir in the pork, and cook about 1 minute, to finish cooking the meat.
- Serve in deep bowls, with optional toppings

It’s brightly coloured, and tastes wonderful – a lovely light supper on a cold day.
