Weekly Meal Plan 2025-07-19

It’s already the fourth week of July – how did that happen? For anyone starting their summer vacation, there’s a pretty good week of weather ahead. I’m glad to see temperatures in the 20s again, as a break from last week’s heat wave.

We might get rain on Sunday and Thursday, but that’s okay – the lawns and gardens could use it! Anyway, plan indoor activities for those days, if needed.

For this week’s menu, I chose old favourites from our meal plan, and no new recipes. But we’ve only had the beef and barley soup once before, so it’s almost new!

The Weekly Plan

Here is our plan for the week starting Sunday, Jul 20, 2025. There are links for some recipes, and others are made “freestyle”.

On Saturday, we’re having an afternoon birthday party for my Dad, who turns 94 this week! I hope the weather is better than it was in 2021, when we celebrated Dad’s 90th birthday!

After a couple of hours of party snacks and birthday cake, we won’t be too hungry, so I put sandwiches on the menu for Saturday night.

Sunday Comforting Beef & Barley Soup
Tip: slow cooker LOW, use quinoa

Tip: add baby carrots

Tuesday — Sheet Pan Hot Italian Meatballs

Wednesday Sheet Pan Lemon Chicken and Vegetables
Tip: very good, no Brussels sprouts

Monday Slow Cooker Apple Pork Roast

Tuesday Slow Cooker Hot Italian Meatballs in Gravy

  • Instead of sheet pan meatballs, I volunteered to cook them in the slow cooker, and Keith agreed.
  • With the meatballs, I added frozen mirepoix, baby carrots, and frozen peas. Then I mixed 1.5 cups beef broth, with 1/4 cup flour, 1/2 tsp salt, and 1/2 tsp ground black pepper. I poured that into the slow cooker, and gently mixed it into the vegetables.
  • I cooked it on high for 1 hour, then on low for 2 hours. After removing the meatballs, I gently stirred the gravy, to thicken it.

Friday – Fajitas

  • Keith had a craving for fajitas, while we walked past the Mexican section at the grocery store on Thursday.
  • So, he bought the ingredients, and made fajitas on Friday
