Slow Cooker Apple Pork Roast

Slow Cooker Apple Pork Roast

This slow cooker pork recipe is easy to prepare, and tastes delicious. The only hard part is waiting until it’s cooked, and ready for supper!

We make this at least once a month, and it makes enough for leftovers for the next day’s supper. Perfect!

Slow Cooker Apple Pork Roast

Easy to prepare, delicious, and perfect for a no-fuss supper, all year round.

Prep: 15 minutes    Cook: 3 hours    Serves 4 (2 meals for 2)

Ingredients

  • 2 cups baby carrots
  • 1 medium apple
  • 1/2 cup chopped onion
  • 3/4 tsp pumpkin pie spice
  • 1 lb pork roast
  • 1/4 tsp salt
  • 1/4 tsp black pepper
  • 1/2 cup unsweetened applesauce

Directions

  1. Cut the baby carrots in half, lengthwise
  2. In a small bowl, microwave the baby carrots, with a 1/4 water, for 90 seconds
  • This softens them a bit, so they aren’t crunchy at supper time!
  • Cut the apples into 8 wedges, and remove the cores (leave the peels on)
  • Put the apples and onion into the bottom of a medium-sized slow cooker.
  • Drain the carrots, and add to the slow cooker.
  • Sprinkle the apples, onions and carrots with 1/2 teaspoon pumpkin pie spice.
  • Rub the pork roast with salt and pepper.
  • Put the roast on top of the apples, onions and carrots in the slow cooker.
  • Pour the applesauce over the roast.
  • Sprinkle with the remaining 1/4 teaspoon pumpkin pie spice.
  • Cook on high heat setting for 1 hour, then on low setting for 2 hours
  • Before serving, test the pork, to be sure it’s at 160°F internal temperature.
  • Recipe Notes

    • We’ve made this with a small pork roast, pork tenderloin, and thick pork chops! The cooking time might change, based on which pork cut you use.
    • We usually serve this with cooked rice or boiled potatoes.
    • Leftovers are great the next day, warmed up in the microwave.
    • We usually have Cosmic Crisp apples, but almost any variety would work!
