It’s the last week of school’s summer vacation, and there’s a good chance of rain for three days. I hope everyone has a backup plan for indoor activities, if needed!
For this week’s menu, I chose old favourites from our meal plan, and included two new recipes – Rotisserie Chicken Noodle Soup, and Creamy Salmon Penne.
We’ll have Keith’s meat loaf Monday and Tuesday. Or, we could switch another meal into the Tuesday slot, and have the meatloaf leftovers on Wednesday.

How It Actually Went
Here’s what we actually had this week – we had 4 of the planned meals
Sunday — Meat Loaf, Easy
- Keith bought the meat loaf ingredients on Saturday, and prepared the meat loaves on Sunday. Two went into the freezer, and he cooked the third one for our supper
Monday — Meat Loaf, Easy
- As usual, there was enough meat loaf for leftovers the next day. A quick and delicious supper.
Tuesday — Rotisserie Chicken Noodle Soup
- The meat loaf suppers bumped this soup to Tuesday. I used the leftover chicken from Saturday, and added more seasonings than the recipe called for.
Wednesday — Sheet Pan Hot Italian Meatballs
- Keith offered to make these meatballs, so I didn’t argue! We can have the orzo supper another time
Thursday — Ribs, Barbecued Back
- Keith went to Costco on Thursday, and headed to the meat aisle. He brought home a pack of ribs, and cooked some for our supper. They started in the sous vide, and finished under the broiler. Delicious!
Friday — Rack of Lamb
- At Costco, Keith also picked up a package of rack of lamb. Most went into the freezer, and he cooked the rest for Friday’s supper. Just like the previous night’s ribs, they started in the sous vide, and finished under the broiler.
Saturday — Sheet Pan Pork Chops & Brussels Sprouts
- We finished the week according to plan, with one of our favourite meals – sheet pan pork chops.
