Tossed Salad with Blue Cheese Dressing

My favourite salad is Spinach Salad with Pear, Stilton and Candied Walnuts, but sometimes we don’t have all the ingredients, or enough time, to make that.

This tossed salad is super easy to make, and a good stand-in for the fancier version. Also, this salad tastes great with burgers, or pretty much anything!

Tossed Salad with Blue Cheese Dressing

Serves 6

Ingredients

  • 1/3 cup olive oil
  • 1 tbsp lemon juice
  • 2 tbsp crumbled Roquefort
  • pinches of salt and pepper
  • 8 cups mixed salad greens

Instructions

  1. Whisk together olive oil, lemon juice, cheese, salt and pepper.
  2. Toss with salad greens
  3. Serve immediately.

Recipe Notes

  • If you don’t like blue cheese, you could substitute old Cheddar, or another strong cheese, for the Roquefort.
  • You could throw in a few dried cranberries, if you’d like, to add a little zing.
