Blondies with Chocolate Chips

This is a lighter, less gooey,  version of traditional Blondies squares. They’re delicious, and they disappear quickly!

Makes 16 squares, about 100 calories each.

Ingredients

  • 1/3 cup all-purpose flour
  • 1/3 cup whole wheat flout
  • 1/4 cup packed brown sugar
  • 1/2 tsp baking powder
  • 1/4 tsp salt
  • 1 egg
  • 1/4 cup canola oil
  • 2 tbsp honey
  • 1 tsp vanilla extract
  • 1/2 cup semi-sweet chocolate chips

Directions

  1. Preheat oven to 350°F
  2. Coat the bottom of an 8″ square baking pan with cooking spray.
  3. In medium bowl, combine the 5 dry ingredients.
  4. In a smaller bowl, combine whisk together the egg, oil, honey and vanilla.
  5. Stir wet mixture into dry mixture, and stir just until combined.
  6. Add the chocolate chips, and stir just until combined (batter will be thick)
  7. Scrape the batter into the 8″ square baking dish, and spread evenly.
  8. Bake in centre of oven, at 350°F, for about 20 minutes, until a cake tester in the centre comes out clean.
  9. Cool on a wire rack for 10 minutes, then cut into 16 squares.
