There’s another good week of weather ahead, for this final full week of summer. We might have a bit of rain today, but it’s mostly sunny after that!
For this week’s menu, I chose old favourites from our meal plan, and included one new recipe – Ginger Chicken Rice Bowl. Instead of chicken breast, I’ll use leftover cooked chicken – there’s usually some in our freezer.
There’s a meat loaf in our freezer too, so that will make Friday’s supper easy!

How It Actually Went
Here’s what we actually had this week – we stuck to the plan every day except Saturday.
Sunday — Ribs, Barbecued Back
- This meal went as planned. Keith cooked the ribs sous vide, for about 5 hours. Then he finished them under the broiler, for about 5 minutes.
Monday — Ginger Chicken Rice Bowl
- I made this new recipe, and it was quick and easy. Instead of raw chicken, I used leftover cooked chicken, and added it near the end of the cooking time.
- The meal was good, but not great. If we make it again, I’ll add more seasonings, and a dash of heat!
Tuesday — Slow Cooker Apple Pork Roast
- This meal went as planned. I make about 1/4 of the online recipe, and that’s just the right amount for the two of us.
Wednesday — Sheet Pan Lemon Garlic Salmon
- This meal went as planned, but the salmon was about double the usual thickness, and it took longer than expected to cook. It was delicious though, and worth the wait!
Thursday — Sheet Pan Hot Italian Meatballs
- This meal went as planned, with sheet pan veggies on the side
Friday — Chinese-Inspired Corn Soup
- This meal went as planned, and I used frozen corn, instead of canned corn this time.
Saturday — Rack of Lamb
- Instead of meatloaf, Keith volunteered to make sous vide rack of lamb. And of course I agreed with that suggestion!
- Like the ribs, he broils this dish for about 5 minutes, after several hours in the sous vide.
