For this week’s menu, I chose old favourites from our meal plan, and included one new recipe – Leek and Potato Soup. It calls for half fat crème fraîche, and if we can’t find that at the grocery store, I’ll use low fat sour cream instead.

There’s a lovely week of weather ahead, with a bit of cloud today, then sunny days, with warmish temperatures, after that. October arrives on Wednesday, and I hope the rest of its weather is just as good. (Not likely!)

How It Actually Went
Here’s what we actually had this week – we stuck to the plan for 5 of the 7 days!
Sunday — Sheet Pan Hot Italian Meatballs
- This meal went as planned, with sheet pan veggies on the side.
Monday — Rotisserie Chicken
- Keith picked up chicken on way home from swimming, and we kept it in the oven, at 250°F, till supper time. It was loosely covered with foil, so it didn’t dry out at all.
Tuesday — Leek and Potato Soup
- This new recipe was easy to make, and we both enjoyed it. However, the soup was thinner than I expected, so I’ll use less liquid next time.
- I used chicken stock, instead of a stock cube and water. so 4 cups would be enough, instead of 5 cups.
Wednesday — Rotisserie Chicken
- We planned to eat the chicken leftovers from Monday’s supper, but our son came to visit on Tuesday, and I offered those leftovers to him!
- So, Keith bought another rotisserie chicken, and we had it on Wednesday.
Thursday — Rotisserie Chicken
Keith has happy to eat leftover chicken again on Thursday, and didn’t look at all disappointed that the Easy Red Lentil Soup got bumped off the menu!
Friday — Sheet Pan Lemon Garlic Salmon
- This meal went as planned, with sheet pan veggies on the side.
Saturday — Ribs, Barbecued Back
- Instead of the sheet pan pork chops, Keith made sous vide ribs, and finished them under the broiler. Delicious!
