Weekly Meal Plan 2025-10-04 carrots

For the first full week of October,  I chose old favourites from our meal plan, and included one new recipe. It’s Easy Canned Tuna Pasta, which I had on the menu before, but it mysteriously got bumped for something else. We’ll see what happens this time!.

There’s a week of mixed weather ahead, with warm and mostly sunny from now till Monday. There’s a good chance of rain on Tuesday, and cooler temperatures roll in on Wednesday, with a bit more rain. And then the sun comes back, for a cool and sunny Thursday!

We’ll spend some time next Saturday getting ready for our Thanksgiving dinner on Sunday (October 12th). Remember to get your turkey at the end of the week, if that’s what you’re serving for Thanksgiving!

How It Actually Went

Here’s what we actually had this week (to be updated later).

Sunday Slow Cooker Apple Pork Roast

  • This meal went as planned, and was delicious, as always. Instead of fresh apples, and applesauce, I used stewed apples from the freezer. I also added a bit of leftover cooked pork, along with the raw pork loin.

Monday Avgolemono Greek Lemon Soup

  • This meal went as planned, and was very tasty.
  • Note: I cook the orzo 10 minutes, instead of 5

Tuesday Chicken stir fry

  • This meal went6 as planned, and as usual, I use whatever ingredients we have on hand.

Wednesday Sheet Pan Pork Chops & Brussels Sprouts

  • This meal went6 as planned, and was delicious, of course!

Thursday Carrot Apple Ginger Soup

This meal went as planned, but I used a leftover leek, instead of onions. I won’t do that again, because the delicate pieces of leek burnt during the first step!

  • It still tasted good, but not as good as usual.

Friday — Sheet Pan Hot Italian Meatballs

  • We didn’t have any roasts in the freezer, so we made sheet pan meatballs instead, with roasted vegetables, instead of the slow cooker pot roast.

Saturday – Fajitas

  • We weren’t in the mood for pasta, so I got the leftover taco beef from the freezer, and the last two frozen tortillas. There was a bit of frozen guacamole too!
  • Delicious, and easy!
