For this week’s menu, I chose old favourites from our meal plan, and included one new recipe – One-Pot Creamy Orzo with Pork. The one-pan recipe looks quick and easy, but I’ve been fooled before! I’ll let you know how it goes.
The Weekly Plan
Here is our plan for the week starting Sunday, Jul 06, 2025. There are links for some recipes, and others are made “freestyle”.
Sunday — Beef Cabbage Stir Fry
Tip: add corn starch; use soy sauce sub, if needed
Monday — One-Pot Creamy Orzo with Pork – NEW!
Tuesday — Turkey Schnitzel
Wednesday — Sheet Pan Hot Italian Meatballs
Thursday — Carrot Apple Ginger Soup
Friday — Sheet Pan Lamb Meatballs
Saturday — Chicken, roasted
How It Actually Went
Here’s what we actually had this week – we made lots of changes!
Sunday — Salmon Stir Fry
- I used leftover salmon in the stir fry, instead of ground beef.
- Also, I’d planned to use coleslaw mix, but the bag in the fridge didn’t look good.
- So, I had to cut up all the vegetables, which added lots of prep time!
Monday — One-Pot Creamy Orzo with Pork
- This new recipe turned out well, and we’ll definitely have it again.
- It tasted like a stroganoff, but with smaller pasta!
Tuesday — Sheet Pan Lemon Chicken and Vegetables
- Keith couldn’t find thin-sliced turkey at the grocery store
- So, he bought chicken thighs, and made this tasty sheet pan recipe
Wednesday — Sheet Pan Hot Italian Meatballs
- This meal went as planned
Thursday — Sheet Pan Lamb Meatballs
- Keith bought ground lamb, and made the meatballs a day earlier than planned
- He put half the batch in the freezer, for a future meal
- We’ll have the Carrot Apple Ginger soup another time
Friday — Chicken, roasted
- We already had the planned lamb meatballs, so we moved the roasted chicken up one night
Saturday — Chicken, roasted
- We had the leftover chicken, for another delicious dinner
