Banana Streusel Muffins

I’ve been making these banana streusel muffins since 2008, when my Mom gave me her recipe.

The muffins are good for breakfast, or afternoon snack, or for a sweet ending to your supper. Use a plate though — they’re very crumbly!

Banana Streusel Muffins

  • Tip: Mix the topping ingredients first, so they’re ready to sprinkle on the muffin batter.

Makes 12 muffins

Ingredients

Topping

  • 1/3 cup packed brown sugar
  • 2 tbsp whole wheat flour
  • 1/8 tsp ground cinnamon
  • 1 tbsp butter

Muffins

  • 1 ½ cups whole wheat flour
  • 1 tsp baking soda
  • 1 tsp baking powder
  • 1/2 tsp salt
  • 1/2 cup raisins
  • 1/2 cup peanut butter chips
  • 3 bananas, mashed
  • 3/4 cup white sugar
  • 1 egg, lightly beaten
  • 1/4 cup canola oil

Directions

  1. Preheat oven to 375° F. Lightly grease 12 muffin cups, or line with muffin papers.
  2. Topping: In a small bowl, mix together brown sugar, 2 tbsp flour and cinnamon. Cut in butter until mixture is very fine. Set aside to use later
  3. In a large bowl, mix together 1 1/2 cups flour, baking soda, baking powder, salt, raisins and peanut butter chips.
  4. In another bowl, beat together bananas, sugar, egg and oil.
  5. Stir the banana mixture into the flour mixture just until moistened.
  6. Spoon the batter into prepared muffin cups.
  7. Sprinkle the streusel topping over the muffins.
  8. Bake in preheated oven for 18 to 20 minutes, until a toothpick inserted into centre of a muffin comes out clean.

Banana Streusel Muffins With Dates

In the photo below, there’s a batch of muffins that I made in November 2018. Instead of raisins and peanut butter chips, I used chopped dates. My notes from that date say “They were delicious!”

Just looking at that topping makes me want to bake another batch tomorrow!
