Mexican Beef and Rice Skillet
This delicious and cheesy Mexican beef and rice skillet is one of our favourite winter suppers. It’s easy to prepare, then relax while it cooks for 25 minutes. It warms us up on a cold evening, and you get great flavours, with very little work. Continue reading “Mexican Beef and Rice Skillet”
Slow Cooker Osso Buco
One of our favourite winter meals is Veal Osso Buco. It simmers all day in the slow cooker, and fills the house with a wonderful aroma. It’s a delicious and filling meal, with a lovely tomato sauce. Continue reading “Slow Cooker Osso Buco”
One-Pot Chinese Beef and Rice
This one-pot recipe is adapted from one in the Betty Crocker’s New Dinner for Two Cook Book, that I got when we were first married, long ago.
It’s quick and easy to make, and a great way to use leftover beef. It would work well with cooked pork or chicken too.
Upside Down Shepherd’s Pie
We found this recipe on the Cooking Light website, long ago, and have enjoyed it a many times. Over time, we adapted the recipe to our tastes, and here’s our revised recipe, with the adjustments that we’ve made to the dish. Continue reading “Upside Down Shepherd’s Pie”
Slow Cooker Swiss Steak
One of our family favourite meals is Swiss Steak. It’s quick and easy to prepare, and tastes great. You can use a less expensive cut of meat, and the long cooking time will make it tender. Continue reading “Slow Cooker Swiss Steak”
Stovetop Swiss Steak
I’ve been making this stove top Swiss Steak recipe, for as long as we’ve been married! I found the original version in a small cookbook published by the Ontario Department of Agriculture & Food, probably in the early 70s.
Hamburger Scramble
We make variations on this quick ground beef recipe, adding whatever vegetables and seasonings that we have on hand. It’s not pretty, but it’s perfect for nights when you’re tired, and the cupboards are almost bare.
