Christmas cookies are one of my favourite parts of the holiday season. No matter how you make them, they are always delicious.

So here’s a recipe for some super quick and easy Christmas cookies you can make whenever you want (even if it’s not Christmas).

This sugar cookie recipe has been passed down in our family for a few generations. You can leave the cookies plain, or add a light layer of icing, or give them a thick coating, and sprinkles too, like we do every Christmas

Christmas Cookies (Sugar Cookies)

This recipe makes about 5 dozen 2″ cookies.

Ingredients

  • 1.5 cups sifted icing sugar (confectioners’ sugar)
  • 1 cup butter at room temperature
  • 1 egg
  • 1 tsp vanilla
  • 1/2 tsp almond flavouring
  • 2.5 cups all-purpose flour
  • 1 tsp baking soda
  • 1 tsp cream of tartar

Directions

  1. In a large bowl, combine the sugar and butter.
  2. Mix in the egg, vanilla and almond flavouring.
  3. In a medium bowl, mix together the flour, baking soda and cream of tartar
  4. Stir the dry ingredients into the sugar mixture, and mix well
  5. Wrap the dough, and refrigerate for 2-3 hours
  6. Heat the oven to 375°F
  7. Divide the dough into 2 portions
  8. On a lightly floured pastry cloth, roll out each portion, to 1/4″ thick
  9. Cut the rolled dough into cookie shapes
  10. Place the cookies onto parchment lined baking sheets
  11. Bake for 7-8 minutes, or until a delicate golden colour

Recipe Notes

  • These cookies can be shaped any way you want (trees, stars, gingerbread man)
  • Cool the cookies completely before decorating them
  • They also go great with frosting and sprinkles
