Cranberry Orange Bread

The bright colours and delicious flavours make this cranberry orange bread perfect for Christmas, or any time of year!

Cranberry Orange Bread

It takes a bit of time to cut the cranberries in half, but it’s worth the effort!

Ingredients

  • 2 cups all-purpose flour
  • 3/4 cup sugar
  • 1.5 tsp baking powder
  • 1/2 tsp baking soda
  • 1/2 tsp salt
  • 1 egg
  • 2 tbsp grated orange rind
  • 1/2 cup orange juice (about 2 medium oranges)
  • 3 tbsp canola oil
  • 2 tbsp hot water
  • 1.5 cups cranberries, halved

Directions

  1. Preheat the oven to 350°F
  2. Line a 9x5x3-inch loaf pan with parchment paper, or grease the pan well
  3. Cut the cranberries in half
  4. Grate the orange rind, then squeeze the orange juice
  5. In a large bowl, combine the flour, sugar, baking powder, baking soda and salt.
  6. In a medium bowl, beat the egg lightly, using a fork
  7. Next, stir in the orange rind, orange juice, oil and hot water.
  8. Next, add the wet mixture to the dry ingredients; and mix thoroughly, but don’t over mix.
  9. Fold in the halved cranberries.
  10. Turn the batter into the loaf pan
  11. Bake at 350F for 50 minutes, or until a cake tester inserted in centre comes out clean.
  12. Remove the bread from the pan; and cool completely on a wire rack, before cutting into slices.

    • I use parchment paper, and extend it 1” on each side. That makes it easy to take out of the pan, after baking
  • Cut the cranberries in half
    • This step takes extra time, but don’t skip it! The bread looks and tastes better with cut cranberries
    • I pinch 2 cranberries between my fingers, and cut through them with a small serrated knife

  • Grate the orange rind, then squeeze the orange juice
    • It’s easier to grate the oranges, before you juice them
    • A medium orange produces about 1/4 cup of juice, so you’ll need 2 oranges

  • In a large bowl, combine the flour, sugar, baking powder, baking soda

  • In a medium bowl, beat the egg lightly, using a fork
  • Next, stir in the orange rind, orange juice, oil and hot water.

  • Next, add the wet mixture to the dry ingredients; and mix thoroughly, but
    don’t overmix.
  • Fold in the halved cranberries.
  • Turn the batter into the prepared loaf pan

  • Bake at 350F for 50 minutes, or until a cake tester inserted in center comes
