There’s a long list of ingredients, but the preparation goes quickly, and supper is on the table in about 40 minutes.
Easy One-Pot Beef Stroganoff
Prep: 15 min Cook: 25 min Serves 2
Ingredients
- 1 tbsp butter
- 1/4 cup diced onion
- Salt and pepper, to taste
- 8 oz lean ground beef
- 1/2 tsp minced garlic
- 1.5 tbsp flour
- 2 tbsp dry white wine
- 14 oz can sliced mushrooms (drained, reserve the liquid)
- 1.5 cups combined beef stock + mushroom liquid
- 1 tbsp Worcestershire sauce
- 1/2 tsp smoked paprika
- 1/2 tbsp Dijon mustard
- 1/2 tbsp tamari or soy sauce
- 1/2 tbsp rice vinegar (unsweetened)
- 4 oz egg noodles, uncooked
- 1/4 cup sour cream
- (optional) 1/2 cup frozen green peas
Directions
- Melt the butter in a large skillet over medium heat.
- Add the onion, and cook, stirring occasionally, until the onion is tender and lightly browned, about 3 minutes
- Season with salt and pepper, to taste.
- Add the ground beef, and break it up in the frying pan.
- Cook until it’s browned, about 4 minutes, stirring occasionally
- Stir in the garlic until it’s fragrant, about 1 minute.
- Whisk in the flour until it’s lightly browned, about 1 minute.
- Stir in the wine, scraping any browned bits from the bottom of the skillet.
- Next, stir in the mushrooms, mushroom liquid + beef stock, Worcestershire, smoked paprika, Dijon, tamari, rice vinegar, and egg noodles
- Season with salt and pepper, to taste.
- Bring to a boil, then cover
- Reduce the heat to medium low, and simmer for 5 minutes
- (Optional) Stir in the green peas, if you’re using them
- Cover, and simmer for another 5 minutes, until the egg noodles are cooked through.
- Stir in the sour cream until heated through, about 2 minutes.
- Serve immediately, in pasta bowls.

There are lots of ingredients for this reciipe! I put everything out on the counter, before I start cooking.
Then, as I use each item, I put it away – back into the cupboard or fridge. This helps me stay organized, and ensure that all the ingredients make it into the skillet!

In the next photo, I’ve added the peas to the skillet, and will simmer the mixture for another 5 minutes.

And here’s the finished dish, after the sour cream was added. It’s in my pasta bowl, ready to eat!
