It’s quick and easy to make, and a great way to use leftover beef. It would work well with cooked pork or chicken too.
One-Pot Chinese Beef and Rice
2 servings Prep: 15 minutes Cook: 30 minutes
Ingredients
- 2 tbsp vegetable oil
- 2/3 cup rice
- 1/2 small onion, chopped
- 1 stalk celery, chopped
- 1/2 cup thinly sliced carrot
- 1 tbsp low-sodium soy sauce
- 1/2 tsp minced ginger
- 1/2 tsp minced garlic
- 1-1/2 cups beef broth
- 1-1/2 cups diced cooked beef
Directions
- Cook the rice, onion, celery and carrot in hot oil over medium heat until the rice is golden brown
- Add soy sauce, ginger, garlic and broth
- Cover, and simmer for 20 minutes
- Add the beef, then cover, and simmer for another 10 minutes.
- Tip: Check after 5 minutes, and if the water hasn’t evaporated, remove the cover
- Serve immediately
Recipe Notes
- Instead of cutting up carrots, celery and onions, use frozen mirepoix mix
- Add more vegetables, if you prefer, or use different ones. I like to add frozen green peas, in the last 5 minutes, for a touch of bright colour
