Oven Baked Quesadillas

We enjoy quesadillas, and Keith used to make them in a frying pan, with butter on the outside of the tortillas. The quesadillas were delicious, but now we enjoy oven baked quesadillas instead.

Baking Quesadillas

The first time we tried baking quesadillas in the oven was back in May 2009, and we both loved them! The flavour was almost the same, and they had fewer calories, without the butter.

The next time we tried them, about a week later, I took a photo, that’s further down this page. The oven makes the tortillas golden brown, thanks to the baking spray.

The light cream cheese adds more flavour, but we usually don’t use half of the tub . Instead, we  just spread a thin layer on each tortilla, and save the leftover cream cheese for snacks, or pasta sauce later.

Oven Baked Quesadillas

Makes 2 servings

Ingredients

  • 1/2 tub (8 oz) light cream cheese spread, chive & onion or herb & garlic
  • 4 flour tortillas (9” diameter)
  • 1/2 cup grated Tex-Mex cheese
  • Baking spray

Directions

  1. Preheat the oven to 400°F
  2. Spread cream cheese on each tortilla, stopping about 1/2” from the edges.
  3. Sprinkle Tex-Mex cheese on half of each tortilla
  4. Next, fold each tortilla in half, over the sprinkled cheese.
  5. Press lightly to seal each tortilla.
  6. Spray both sides of each tortilla with baking spray.
  7. Place the tortillas on an ungreased baking sheet
  8. Bake in the centre of the oven for about 15 minutes, turning the after 10 minutes, until the cheese is melted.
  9. Cut each quesadilla into wedges and serve with salsa and light sour cream.

The night that I took this photo, Keith made some taco-flavoured ground beef, to serve on the side.

You could put the beef inside the quesadilla, before baking them, for another variation.

In the background, there’s a serving of coleslaw, because vegetables are important!
