Pasta with Steak Strips
Time: 30 minutes Serves 2
Ingredients
- ½ lb left over steak, cut into strips
- 1/2 lb linguine or spaghetti
- ¼ cup Parmesan cheese
- Dozen spears of asparagus
- 1 cup broccoli florets
- 1 tbsp olive oil
- 1 egg
- Salt and pepper to taste
Instructions
- Cook the pasta, according to package directions
- At the same time, steam the broccoli on the stove top or in the microwave, for 5 minutes.
- Add the asparagus to the broccoli, and steam for another 5 minutes.
- Heat the steak strips in the microwave for about 2 minutes, until warm.
- Meanwhile, in a large bowl, beat the egg, salt and pepper
- Drain pasta, reserving 1/2 cup of the pasta water
- Add the drained pasta to the egg mixture.
- Toss until the egg is cooked, about 1 minute.
- Add the Parmesan cheese, and mix well.
- Add the steamed vegetables and steak strips.
- Toss to combine, and serve immediately.
