Pasta With Steak Strips

The first time we made this recipe was way back in March 2008! We had leftover rib eye steak in the fridge, and fresh asparagus. Those ingredients inspired this quick and delicious supper recipe.

Pasta with Steak Strips

Time: 30 minutes      Serves 2

Ingredients

  • ½ lb left over steak, cut into strips
  • 1/2 lb linguine or spaghetti
  • ¼ cup Parmesan cheese
  • Dozen spears of asparagus
  • 1 cup broccoli florets
  • 1 tbsp olive oil
  • 1 egg
  • Salt and pepper to taste

Instructions

  1. Cook the pasta, according to package directions
  2. At the same time, steam the broccoli on the stove top or in the microwave, for 5 minutes.
  3. Add the asparagus to the broccoli, and steam for another 5 minutes.
  4. Heat the steak strips in the microwave for about 2 minutes, until warm.
  5. Meanwhile, in a large bowl,  beat the egg, salt and pepper
  6. Drain pasta, reserving 1/2 cup of the pasta water
  7. Add the drained pasta to the egg mixture.
  8. Toss until the egg is cooked, about 1 minute.
  9. Add the Parmesan cheese, and mix well.
  10. Add the steamed vegetables and steak strips.
  11. Toss to combine, and serve immediately.
