Pork Tenderloin in Lemon Sauce

During the winter, we eat lots of stews and hearty casseroles. But on hot summer days, we look for lighter recipes for our supper meals, like this pork tenderloin recipe.

This recipe is an old favourite of ours, and we eat it in the cooler months too! It’s quick and easy to make, with a light, tangy taste. Also, it’s low in calories, if you’re trying to cut back a little!

We usually serve this with rice, and a green vegetable or tossed salad, to brighten the plate.

Pork Tenderloin in Lemon Sauce

Serves 2

Ingredients

  • 1 cup chicken broth
  • 1 tbsp cornstarch
  • 3 tbsp lemon juice
  • 2 tsp olive oil
  • 3/4 lb pork tenderloin, cut into 1/4” slices
  • 1 tsp dried thyme
  • 1/4 tsp salt
  • 1/4 tsp ground pepper

Directions

There are 3 main steps – prepare the sauce mixture, cook the pork, then cook the sauce.

A) Prepare the Sauce

  1. To start the sauce, put the broth into a small bowl
  2. Then, add the cornstarch and stir until smooth.
  3. Next, stir in the lemon juice, then set the broth mixture aside

B) Cook the Pork

  1. In a large non-stick frying pan, heat the oil, over medium heat.
  2. Add the pork in a single layer, and sprinkle with thyme, salt and pepper
  3. Sauté for 2 minutes, to cook the first side
  4. Turn the slices over and sauté until cooked through, 2-3 minutes.
  5. Remove pork from the skillet, and cover, to keep warm

C) Cook the Sauce

  1. Stir the broth mixture, and pour it into the skillet
  2. Simmer until slightly thickened and heated through, about 1 minute
  3. Serve pork slices, and top with the lemon sauce.
