This recipe is an old favourite of ours, and we eat it in the cooler months too! It’s quick and easy to make, with a light, tangy taste. Also, it’s low in calories, if you’re trying to cut back a little!
We usually serve this with rice, and a green vegetable or tossed salad, to brighten the plate.
Pork Tenderloin in Lemon Sauce
Serves 2
Ingredients
- 1 cup chicken broth
- 1 tbsp cornstarch
- 3 tbsp lemon juice
- 2 tsp olive oil
- 3/4 lb pork tenderloin, cut into 1/4” slices
- 1 tsp dried thyme
- 1/4 tsp salt
- 1/4 tsp ground pepper
Directions
There are 3 main steps – prepare the sauce mixture, cook the pork, then cook the sauce.
A) Prepare the Sauce
- To start the sauce, put the broth into a small bowl
- Then, add the cornstarch and stir until smooth.
- Next, stir in the lemon juice, then set the broth mixture aside
B) Cook the Pork
- In a large non-stick frying pan, heat the oil, over medium heat.
- Add the pork in a single layer, and sprinkle with thyme, salt and pepper
- Sauté for 2 minutes, to cook the first side
- Turn the slices over and sauté until cooked through, 2-3 minutes.
- Remove pork from the skillet, and cover, to keep warm
C) Cook the Sauce
- Stir the broth mixture, and pour it into the skillet
- Simmer until slightly thickened and heated through, about 1 minute
- Serve pork slices, and top with the lemon sauce.
