We’ve had this roasted salmon recipe many times, and it’s always delicious. Quick and easy to make, this salmon dish is perfect for a relaxing supper on a Saturday night.
Salmon Roasted in Herb Butter
Heat the pan first, then cook the salmon in the melted herb butter
Total Time: 15 min      Servings: 2
Ingredients
- 2 tbsp butter
- 2 tbsp minced parsley or dill
- 1 salmon fillet, 12 oz (skin on)
- Salt and ground black pepper. to taste
- Lemon wedges (optional)
Directions
- Preheat oven to 450°F.
- Put the butter, and 1 tablespoon of the herbs, in a roasting pan, just large enough to fit the salmon
- To preheat the pan, put it into the preheated oven
- Heat the pan for about 5 minutes, until the butter melts and the herbs start to sizzle.
- Next, add the salmon to the pan, skin side up.
- Roast for 4 minutes, then remove pan from the oven
- Peel the skin off the salmon
- Note: If the skin doesn’t come off easily, cook the salmon for another 1 or 2 minutes
- Sprinkle salmon with salt and pepper, on both sides
- Roast the salmon for another 3 to 5 minutes, depending on the thickness of the fillet
- Check the internal temperature, in the thickest part of the salmon.
- The recommended safe minimum temperature is 145°F (63°C)
- Cut the salmon into two portions
- Spoon a little of the butter/herb mixture over each portion
- Top with the remaining 1 tablespoon of fresh herbs
- (Optional) Serve with lemon wedges on the side

I took this photo in June 2016, the first time we tried the recipe. We’ve enjoyed the recipe many times since then, and I finally put our version of the recipe on my old food blog, in April 2018.
Another side salad that we enjoy with salmon is Chilled Potato Salad. People think of potato salad as a summer dish, but it’s good all year round!
