Stir-Fried Shrimp with Vegetables

Ingredients
- 12 medium shrimp, peeled and deveined
- 1 tbsp olive oil
- 1 tbsp low-sodium soy sauce
- 1 tsp fresh ginger, grated
- 1 garlic clove, minced
- 1 cup green beans
- 1 cup chopped Napa cabbage
Instructions
- Heat olive oil in a large skillet or wok over medium heat.
- Add ginger and garlic; sauté for 30 seconds.
- Add shrimp and stir-fry for 2-3 minutes until pink.
- Toss in vegetables and soy sauce, cooking until crisp-tender (about 5 minutes).
- Serve over jasmine rice
Tip: Skip high-potassium veggies like spinach and avoid bottled sauces with added phosphorus
