This quick and easy dish has shrimp stir-fried with ginger, garlic, and a splash of low-sodium soy sauce

Stir-Fried Shrimp with Vegetables

Ingredients

  • 12 medium shrimp, peeled and deveined
  • 1 tbsp olive oil
  • 1 tbsp low-sodium soy sauce
  • 1 tsp fresh ginger, grated
  • 1 garlic clove, minced
  • 1 cup green beans
  • 1 cup chopped Napa cabbage

Instructions

  1. Heat olive oil in a large skillet or wok over medium heat.
  2. Add ginger and garlic; sauté for 30 seconds.
  3. Add shrimp and stir-fry for 2-3 minutes until pink.
  4. Toss in vegetables and soy sauce, cooking until crisp-tender (about 5 minutes).
  5. Serve over jasmine rice

Tip: Skip high-potassium veggies like spinach and avoid bottled sauces with added phosphorus
