Later, I adapted the recipe, so I could make it on the stovetop, in a much quicker time! The flavours are just as good, and now it’s a 45 minute project, instead of taking all day.
Stovetop Carrot Apple Ginger Soup
Prep: 15 min Cook: 45 min  Serves 2
Ingredients
•   1 lb. fresh carrots, peeled and cut into small rounds
•   1 tsp minced ginger
•   1 Cosmic Crisp apple, peeled and diced
•   1/4 cup diced onion
•   1 tsp minced garlic
•   1 tsp allspice
•   1/2 tsp salt
•   1/2 tsp ground black pepper
•   7 oz coconut milk
•   2 cups water
•   (optional garnish) coconut flakes, Tamari or soy sauce
Directions

1. Microwave sliced carrots about 1 minute, to tenderize them
2. In large saucepan, over medium heat, add 1 tbsp oil
3. Add sliced carrots, apples, and onion
4. Cook, stirring often, 2 to 4 minutes, until apple is tender.
5. Add ginger and garlic, and cook, stirring constantly, 1 minute.
6. Stir in remaining ingredients
7. Bring to a boil over medium-high heat.
8. Cover, reduce heat to medium-low, and simmer, stirring occasionally, 30 minutes or until carrots are tender.
9. Remove from heat.
10. Use an immersion blender to blend the soup until smooth.
Here’s how the soup looks, when we serve it. I don’t sprinkle any coconut flakes on top, but I like to drizzle a bit of Tamari on top.

9. Remove from heat.
- Note: It doesn’t look too appealing at this point – all beige and lumpy!
10. Carefully use an immersion blender to blend the soup until smooth.

11. Use a slotted spoon to check for lumps!
