We’re in another heat wave, with temperatures in the low 30s, until Tuesday. And if you like hot and rainy day, you’re in luck! That’s the forecast for Monday to Wednesday.
For this week’s menu, I chose old favourites from our meal plan, and with no new recipes. We tried two new recipes last week, so we need a rest this week!
Menu Notes
- For the beef and barley soup, I used quinoa last time, and that worked well. I’ll do that again this time!
- Usually I make the carrot apple soup on the stovetop, but maybe I’ll use the slow cooker this time.
- For the chicken mushroom pasta, we usually use fusilli, instead of penne. Did you know that penne is shaped like the nib of an old-fashioned quill pen? (Wikipedia link)

How It Actually Went
Here’s what we actually had this week – we went off track for 3 days, and had 4 of the planned meals.
Sunday — Sheet Pan Lemon Garlic Salmon
This meal went as planned, and Keith included a tasty assortment of seasonal vegetables.
Monday – Burgers
- Our granddaughter came to visit for a couple of cays, so Keith made burgers and fries for supper – that’s one of her favourite meals (and Keith’s too!).
Tuesday — Turkey Schnitzel
- For the second supper with our granddaughter, Keith made another of her favourite meals– Turkey Schnitzel. We all enjoyed it, with carrots on the side. We made banana bread in the afternoon, and that was an excellent dessert!
Wednesday — Tuna Sandwiches
- Keith took our granddaughter home after lunch, and got stuck in bad traffic on the way home. Neither of us felt like cooking, so instead of the Carrot Apple Ginger Soup, we had tuna sandwiches. And we had them on paper plates, because our new dishwasher wasn’t installed yet.
Thursday — Sheet Pan Lamb Meatballs
- Things were finally back on track, and Keith made sheet pan lamb meatballs for supper, as planned. There were still a couple of packs in the freezer, from the last batch that he prepared. Unfortunately, the dishwasher installer arrived after supper, so we had to hand wash one last round of dishes.
Friday – Fajitas
This meal went as planned, and our new dishwasher is happily holding the dirty dishes, and ready to clean them in a day or two. Hooray!
Saturday — Sheet Pan Pork Chops & Brussels Sprouts
- This meal also went as planned. It rarely gets bumped from the schedule, because it’s one of our favourites.
