If you’re in the Toronto area, the CNE opened on Friday, and runs until labour Day (Sept 1st). This is the annual sign, for parents and kids, that there are only 2 weeks of school’s summer vacation left! That’s good news for some people, and sad news for others.
For this week’s menu, I chose old favourites from our meal plan, and no new recipes. We just finished a very hectic week, and don’t have the energy for anything new!
And in happy news, we finally got our new dishwasher, after hand washing everything for the past few weeks. That certainly makes meals easier, and more enjoyable!

Here is our plan for the week starting Sunday, Aug 17, 2025. There are links for some recipes, and others are made “freestyle”.
Sunday — Sheet Pan Lemon Chicken and Vegetables

Tuesday — Slow Cooker Apple Pork Roast

TIP: slow cooker LOW, use quinoa
Thursday — Sheet Pan Lemon Garlic Salmon
Friday — Chicken, roasted
TIP: Use rotisserie chicken, for quick meal

How It Actually Went
Here’s what we actually had this week – we stuck to the plan most days!
Sunday — Leg of Lamb
- Keith has been looking for rack of lamb in the grocery stores, but couldn’t find any. Last Saturday, he gave up, and bought a small boneless leg of lamb, for our Sunday supper.
- He cooked it sous vide for most of the day, then broiled it for about 5 minutes, just before serving it.
- It wasn’t as “melt in your mouth” as rack of lamb, but it was delicious!
Monday — Sheet Pan Hot Italian Meatballs
- Keith makes a batch of these meatballs, by mixing hot Italian sausage, with ground pork, about half and half. Then he freezes the meatballs, and we thaw out a package when needed. He cooks them on a sheet pan, with an assortment of cooked veggies.
Tuesday — Slow Cooker Apple Pork Roast
- This meal went as planned
Wednesday — Comforting Beef & Barley Soup
- There wasn’t any cooked beef in the freezer, so I had to change my plans! I found two packages of leftover pot roast, so I used those as the base. I added a box of no salt added beef broth, and a 1/3 cup of rinsed quinoa, instead of barley.
- It wasn’t the best meal we’ve ever had, but it was good enough, and filled our tummies!
Thursday — Sheet Pan Lemon Garlic Salmon
- This meal went as planned
Friday — Chicken, roasted
- We usually make a roast chicken dinner from scratch, but opted for a rotisserie chicken this week. It’s a bit saltier than our roast chicken, but it’s perfect for an easy supper at the end of a long week.
Saturday — Chicken, roasted
- And what’s even easier than going out to buy a rotisserie chicken? Eating the leftover chicken from the day before!
