There’s a pretty good week of weather ahead, with a mix of sun and clouds, and temperatures in the low 20s. There might be some rain tomorrow, but we can find indoor things to do!
For this week’s menu, I chose old favourites from our meal plan, and 3 “almost-new” recipes – Ground Beef Soup, Turkey Lettuce Wraps, and Stir-Fried Shrimp

The “almost-new” recipes are ones that we’ve only had once before, and not since late last year. We enjoyed all three recipes last time, so I hope we still like them!
And it’s my birthday on Thursday, so I put rotisserie chicken on the menu for that night’s supper. That way, nobody has to cook, unless Keith wants to make some frozen fries in the air fryer!

Sunday — Quick and Easy Ground Beef Soup
TIP: use diff veg mix cauliflower/carrot/snow pea
Monday — Sheet Pan Pork Chops & Brussels Sprouts
Tuesday — Asian-Inspired Turkey Lettuce Wraps
Wednesday — Stir-Fried Shrimp with Vegetables
Thursday — Rotisserie Chicken
Friday — Fajitas
Saturday — Slow Cooker Apple Pork Roast

How It Actually Went
Here’s what we actually had this week – we stuck to the plan most days!
Sunday — Quick and Easy Ground Beef Soup
- This meal went as planned, and I made a few changes to the recipe, while making it. Here’s what I added:
- 1 teaspoon each, from two kinds of Mrs. Dash seasonings
- 1 tsp smoked paprika
- 1 tsp minced garlic (from a jar)
- 1 tsp Worcestershire sauce
- The recipe called for 2 cups of water, but we had a box of low-salt beef broth in the fridge, so I used that instead

Monday — Sheet Pan Pork Chops & Brussels Sprouts
- This meal went as planned – no changes
Tuesday — Stir-Fried Shrimp with Vegetables
We switched the Tuesday and Wednesday suppers, but otherwise, this meal went as planned. I made a few changes to the recipe, while making it. Here’s what I added:
- 1/3 cup frozen chopped onion, 1 tsp minced garlic, 1 tsp minced ginger
- When serving, we sprinkled True Lemon on top, and VH Sweet and Sour sauce
Wednesday — Asian-Inspired Turkey Lettuce Wraps
This meal went as planned, and we made a slight change when serving it. Keith couldn’t find butter lettuce, so he bought Boston lettuce instead. To make the wraps easier to hols and eat, we put the lettuce on n 8” tortilla, and the meat mixture on top of that.
Thursday — Rotisserie Chicken
- To go along with the rotisserie chicken, Keith made fries in the air fryer, and we had sliced tomatoes too.
Friday – Fajitas
- This meal went as planned – no changes
Saturday — Rotisserie Chicken
- To go along with the chicken leftovers, Keith made fries again, and we had tossed salad too.
