It’s the first week of November, and the weather forecast is pretty good, for this time of year. Temperatures reach the double digits most days, and Monday is the only day that’s showing showers. But we had frost one morning last week, so the colder days are definitely coming!
On Wednesday, we’re trying the first new recipe – Skillet Apple Cider Chicken. Keith already bought the two ingredients that we didn’t have – apple cider and ground coriander. He could only find cider in a large jug so I hope it’s freezable!
The other new recipe is 15-Minute Wonton Soup, and we’ll have that on Thursday, if Keith can find the wontons that the recipe recommends – Bibigo Chicken & Cilantro Fully Cooked Mini Wontons. Apparently they’re sold at Walmart and Costco, which are both close by, but sometimes the things you need are out of stock!

Here’s what we actually had this week. We stuck to the menu every day except Thursday.

Wednesday — Skillet Apple Cider Chicken
- This new recipe was delicious, and we’ll definitely have it again.
- I put a photo below, with my portion in a pasta bowl.
- It looks like sliced peaches with the chicken, but it’s really sliced apples!
Thursday — Sheet Pan Hot Italian Meatballs
- Keith couldn’t find mini wontons, so we’ll have the soup another time.
Friday — Sheet Pan Lemon Garlic Salmon
Saturday — Ribs, Barbecued Back
