Zucchini Banana Bread and Muffins

In the summer of 2008, we gardened enthusiastically, with tomatoes, peppers, lettuce, sorrel, and zucchini, plus lots of flowers.

It was our first (and last) time growing zucchini, which produced way more than we could eat!

Delicious Bread

We ate zucchini all kinds of ways, from salad, to pasta, to baked goods. This Zucchini Banana Bread was my favourite way to use the bountiful harvest.

I posted the recipe on my old blog, on July 29, 2008, and we’ve made it many times since then, but with zucchini from the grocery store!

The recipe makes 2 loaves, but I made one loaf and 12 muffins.

Zucchini Banana Bread and Muffins

Zucchini Banana Bread

Makes 2 loaves

Ingredients

  • 2 c. grated zucchini
  • 1 c. mashed bananas
  • 3 eggs
  • 1/3 c. sour cream
  • 1 tsp. salt
  • 2 c. sugar
  • ½ c. vegetable oil
  • 3 c. flour
  • 1½ tsp. baking powder
  • 1½ tsp. baking soda
  • 3/4 tsp. cinnamon
  • ½ tsp. nutmeg
  • ¼ tsp allspice
  • 1½ tsp. vanilla
  • 1½ c. raisins, optional (I’ve also used blueberries — very good)

Directions

  1. Shred zucchini and set aside. (I try to press out all the liquid)
  2. Mash bananas and set aside.
  3. In large mixing bowl, combine eggs, sour cream, salt, sugar and oil.
  4. In a medium bowl, mix flour, baking powder, baking soda, cinnamon, nutmeg and allspice
  5. Stir into egg mixture.
  6. Add vanilla and raisins.
  7. Add zucchini and bananas and continue to mix until blended.
  8. Pour into 2 greased and floured loaf pans.
  9. Bake in 350 degree oven for 45-55 minutes.
  10. Cool on wire rack for 10 minutes, then remove from pan to completely cool on wire rack.

Zucchini Banana Bread – Muffins

Instead of making 2 loaves, you could make one loaf and 12 muffins, like I did. Or, make 24 muffins.

To make 12 muffins,

  1. Lightly grease 12 muffin tins
  2. Fill the tins with batter, about 3/4 full
  3. Bake the muffins for 20-22 minutes, at 350°F.

Zucchini in the Garden

As far as I remember, 2008 was the only year that we planted zucchini, and in the photo below, it had been growing for about a month.

According to my notes, we called one of the plants “Audrey”, in honour of the scary plant in the Little Shop of Horrors movie (Wikipedia).

By early July, the zucchini plant had beautiful yellow blossoms.

A few weeks later, the zucchinis were growing to a good size.

We harvested our first zucchini on July 19th, and used it in a Zucchini Salad with Basil Dressing.
