Chicken Parmesan is my favourite meal of all time! It’s like a pizza, but the bread is meat.
It’s so good and can be super versatile, if you want to eat it with bread, pasta, or even turn it into a sandwich.
Chicken Parmesan for Two
Ingredients
- 1 cup shredded mozzarella cheese
- 2 boneless, skinless chicken breasts
- Kosher salt & black pepper
- ½ cup all-purpose flour
- 1 egg, beaten
- 1 cup breadcrumbs
- ½ cup grated Parmesan cheese
- 2 tbsp high-heat oil
- 1 cup marinara sauce
Instructions
A) Get the chicken ready.
- Turn the oven on to 400°F, or 200°C.
- To make thin cutlets, cut each chicken breast in half horizontally.
- Add salt and pepper to both sides.
B) Prepare the Breading Station.
- Next, put the flour in a shallow bowl.
- In a second shallow bowl, put the beaten egg.
- In a third shallow bowl, combine the breadcrumbs and Parmesan
C) Coat the Chicken
- First, press each chicken cutlet into the flour, on each side, and shake off any extra
- Next, dip the chicken into the egg mixture, on each side
- Finally, coat the chicken in the breadcrumb mixture, on each side
D) Prepare the chicken.
- In a skillet, heat the oil over medium heat.
- The chicken will finish cooking in the oven, but fry it for 3–4 minutes on each side, until golden brown.
E) Put Together
- Put the cutlets of chicken in a baking dish.
- Over each piece, spoon marinara sauce and liberally top with mozzarella.
F) Bake
- Bake for 10 to 15 minutes, or until the chicken reaches 165°F and the cheese is melted and bubbling.

Recipe Notes
For Christmas in 2022, I got a Joshua Weissman cookbook. After flipping through it, the first recipe I tried was Chicken Parmesan. It was more complicated than what I usually made, as a beginner chef, but it was worth all the work!
Since then, I’ve made Chicken Parmesan many times, and gradually created my own version of the recipe. As I said at the start of this recipe, it’s my favourite!
In the photo below, you can see one of the first times I made Chicken Parmesan, in February 2023. Do you think I put enough cheese on top of each piece? LOL!
And I made two pieces of garlic toast too! Maybe we ate that while waiting for the lava-hot cheese to cool down a bit.
