Chicken Parmesan is my favourite meal of all time! It’s like a pizza, but the bread is meat.
It’s so good and can be super versatile, if you want to eat it with bread, pasta, or even turn it into a sandwich.
This recipe is adapted from the Mushrooms section, in the Chatelaine Quickies cookbook.
I’ve adjusted it for 2 servings, and added cooked chicken, for a heartier meal.
