We first made this recipe in February 2017, and we really enjoyed it. The kitchen smelled wonderful while the beef, carrots, and sauce were cooking, and it tasted great too.
You can see a picture from that supper, further down the page. The finished dish doesn’t look too pretty, but it was delicious, and we’ve made it many times since then.
We usually serve this stir fry with long grain rice, but potatoes, or steamed veggies on the side, are delicious too.
Ginger Beef Stir Fry
Prep: 30 min Cook: 10 min Serves 2
Ingredients
- 1/2 tbsp plus 1 teaspoons cornstarch, divided
- 1 tbsp water
- 1/8 tsp salt
- 1/2 lb beef top sirloin steak
- 1/2 cup beef broth
- 1 tbsp low sodium soy sauce
- 2 tsp sugar
- 1 tsp grated orange peel
- 3 tbsp canola oil, divided
- 1 medium carrot
- 1/2 tbsp minced ginger (from a jar)
- 1 tsp minced garlic (from a jar)
- 1/4 tsp crushed red pepper flakes, optional
- cooked rice
Preparation Steps
The beef is sliced and then “velveted”, to make it tender. See the helpful Velveting Beef post on RecipeTinEats for more details.
- Cut the beef into 1/4-inch-thick strips
- In a medium-sized bowl, mix 1/2 tablespoon cornstarch, water and salt
- Add the sliced beef, and toss to combine
- Let the beef soak for about 20 minutes
While the beef soaks, prepare the seasoning sauce, and the carrots
- In a small bowl, mix broth, soy sauce, sugar, orange peel and remaining 1 teaspoon cornstarch until smooth.
- Cut the carrots diagonally, into thin slices
Cooking Steps
First, cook the beef:
- In a large skillet, heat 2 teaspoons oil over medium-high heat
- Stir-fry half of the beef until browned, 2-3 minutes, then remove from pan.
- Repeat with an additional 2 teaspoons oil and the remaining beef.
Next, cook the carrots and sauce:
- Add the remaining 2 teaspoons oil to the pan, and stir-fry the carrots, about 2 minutes.
- Add ginger, garlic and pepper flakes (optional – we used them)
- Cook and stir until the mixture is fragrant, about 30 seconds.
- Stir the broth mixture and add to the pan
- Bring to a boil, then cook and stir until slightly thickened.
Combine and serve:
- Stir in the beef and heat through.
- Divide onto 2 plates, and serve with the cooked rice
