There’s a pretty good week of weather ahead, except for a bit of rain on Monday – and that’s the first of June!
This week’s new recipe is One-Pan Chicken and Asparagus Skillet Dinner which is ready in about 30 minutes to cook, and there’s only one pot to wash!

Food Celebration Days
Almost every day of the year has a food celebration that we can enjoy, or ignore! Here are a few of the food days for the upcoming week, with recipe ideas for you.
Monday, Jun 01 – National Olive Day
This celebration was started 2015 by the Divina food company, to encourage us to enjoy olives, all year round.
Here are a couple of recipes to try:
- This recipe for Burger with Creamy Olive Topping sounds tasty! It makes enough topping for 3 or 4 burgers
- And this quick recipe for One-Skillet Mediterranean Chicken takes about 25 minutes, and serves 4.
Tuesday, Jun 02 – National Rotisserie Chicken Day
National Rotisserie Chicken Day also started in 2015, by the Boston Market restaurant chain. We enjoy rotisserie chicken about once a month, and a nice break from cooking.!
If you have leftover rotisserie chicken, here are a couple of recipes to try:
- This copycat recipe for Olive Garden Chicken Gnocchi Soup is ready in about 30 minutes, and it serves 6
- Or try this Rotisserie Chicken Pasta instead. It’s ready in 20 minutes, and it serves 6
Thursday, Jun 04 – National Cheese Day
It’s not clear how National Cheese day got started, but it’s a good excuse to enjoy a cheesy supper!
Here are a couple of recipes to try for Cheese Day:
- Use store-bought tortellini in this recipe for Tortellini With Sausage and Greens It only takes 25 minutes to prepare, and serves 4.
- I’m tempted to try this recipe for Parmesan Pork Medallions . They’re ready in 20 minutes, and the recipe serves 2. Perfect!
