The muffins are good for breakfast, or afternoon snack, or for a sweet ending to your supper. Use a plate though — they’re very crumbly!

In the summer of 2008, we gardened enthusiastically, with tomatoes, peppers, lettuce, sorrel, and zucchini, plus lots of flowers.
It was our first (and last) time growing zucchini, which produced way more than we could eat!
This one-pot recipe is adapted from one in the Betty Crocker’s New Dinner for Two Cook Book, that I got when we were first married, long ago.
It’s quick and easy to make, and a great way to use leftover beef. It would work well with cooked pork or chicken too.
Whether it’s hot outside, or freezing cold, we always enjoy this simple lemon and egg soup. It only takes a few minutes to prepare, and it has a bold lemony flavour, that I love!
The egg makes the soup a bit creamy, but not too thick, and it’s added slowly to the soup, to prevent it from turning into “scrambled eggs”!

This cake is soft, gooey and absolutely delicious, which is surprising, considering its list of basic ingredients.
This recipe was used often during wartime when supplies were limited, which is why it doesn’t include milk or eggs. Despite that, it’s easy to make and always turns out great.

This delicious pancake recipe has been passed down through my family for 4 generations, going all the way back to my great grandmother – my mother’s mother’s mother.
