These muffins don’t look very fancy, but they’re delicious! Keith has one for breakfast every morning, to get his day off to a good start.
The muffins store well in the freezer, and we take one or two out every evening, to enjoy the next day.

For this week’s menu, I chose old favourites from our meal plan, with chicken for our Thanksgiving dinner on Sunday. Yes, turkey is the traditional choice, but we find it dry, so we’ve made chicken instead, for the past few years.
For the first full week of October, I chose old favourites from our meal plan, and included one new recipe. It’s Easy Canned Tuna Pasta, which I had on the menu before, but it mysteriously got bumped for something else. We’ll see what happens this time!.

For this week’s menu, I chose old favourites from our meal plan, and included one new recipe – Leek and Potato Soup. It calls for half fat crème fraîche, and if we can’t find that at the grocery store, I’ll use low fat sour cream instead.
You can make this tasty and filling perogy ham casserole with just 4 ingredients. It won’t be as good as Grandma’s recipe, but it’s much easier and quicker!
