There’s a week of mixed weather ahead, but tomorrow looks perfect – sunny and 24°C. I’ll get the indoor chores done today, then get out for some sun tomorrow.
Keith loves meatloaf, so I’ve put that on the menu for Father’s Day tomorrow. There’s one in the freezer, so it will be an easy supper to make!

Food Celebration Days
Almost every day of the year has a food celebration that we can enjoy, or ignore! Here are a few of the food days for the upcoming week, with recipe ideas for you.
Thursday, Jun 25 – Global Beatles Day
This celebration was started in 2009 by lifelong fan Faith Cohen, and it’s officially recognized by Apple, and The Beatles. The Beatles sang “All You Need is Love”, and some tasty food helps too!
Here are a couple of Beatles-related recipes to try:
- Before you try this recipe for Paul McCartney’s Mashed Potatoes, watch the video that’s in the blog post. It’s from 1998, and Paul shows how to make his late wife Linda’s recipe. I’d leave out the raw onion, but he seemed to enjoy it!
- And this recipe for Paul and Linda McCartney’s Lentil Soup was featured on an episode of The Simpsons. It serves 2-3 people, and I’d estimate about an hour to make it.
Friday, Jun 26 – National Coconut Day
This food day was started in 2019 by the Coconut Coalition of the Americas (CCA), to highlight the versatility and benefits of coconuts.
Here are a couple of coconut recipes to try:
- This Creamy Coconut Milk Chicken Recipe takes 10 minutes of prep time, cooks for 30 min, and serves 4
- Or try this recipe for Easy Coconut Shrimp, that serves 4. Prep time is 20 minutes, and it cooks for 10 minutes
Saturday, Jun 27 – International Pineapple Day
Andrew Lee started this food day in 2011, when he told James Tamplin it was “Bring Your Pineapple to Work Day.” He added the day to their company calendar, and that inside joke turned into a long-running pineapple celebration!
Here are a couple of pineapple recipes to try:
- For a quick supper, try this 20 Minute Ginger Pineapple Chicken Stir Fry recipe. It’s ready in 20 minutes.
